Rich chocolate layer cake

Ingredients :

  1. 7 eggs
  2. 200g caster sugar                    
  3. 150g plain flour
  4. 50g coca powder
  5. 4tblsp butter ,melted
 filling
  1. 200g dark chocolate
  2. 125g butter
  3. 4tblsp icing sugar

  1. 75g toasted flaked almonds
method
  1. Grease a deep 23 cm square cake tin and then line the base with baking paper.
  2. Whisk the egg and  caster sugar together in a mixing bowl with an electric whisk for about 10 min or until the mixture is light and foamy and the whisk leaves a trail that leaves a trail few seconds when lifted.
  3. Sieve the flour and coca together and fold half into the mixture ,drizzle over the melted butter and fold in the rest of the flour and coca. Pour into the prepared tin and bake in a preheated oven ,180 C for 30-35 min or until springy to touch.Leave it to cool.
  4. While the cake is cooling make the filling .Melt the chocolate and butter together,then stir it in the icing sugar ,leave it to cool .Beat until thick enough to spread.
  5. Divide the cooled cake into 3 layers lenghtways.Spread the filling on top of each layer.Remember to spread it even on the top and sides.Press the almonds on to the sides.
